PIZZA CAPRICCIOSA RECIPE

Pizza Capricciosa is a very popular type of pizza, made with simple and tasty ingredients like ham, mozzarella and/or cheese, mushrooms and olives.
I like to make my pizza from scratch and I prepare myself the dough for the crust, although it may be easier to buy it. Homemade pizza dough is tastier and is quite easy to prepare.
I use a large bowl to combine lukewarm water, olive oil, sugar and salt then I add the flour mixed with dried yeast. The secret of a good pizza dough is to prepare a soft and elastic dough.



I like thin and crispy pizza crust and I roll the dough very thin and I add the toppings right away.
If you prefer fluffy pizza crust, after you roll out the dough let it rest for 30 minutes. The dough will continue to rise and the pizza crust will be more fluffy.
You can serve pizza Capricciosa garnished with basil.

Ingredients for pizza Capricciosa (2x25/35cm)


For dough:
- 450-500gr flour
- 7gr dries yeast
- 250ml lukewarm water
- 1 teaspoon sugar
- 1 teaspoon salt
- 3 tablespoons olive oil
For sauce
- 3 tablespoons tomato paste
- 160ml water
- 1 teaspoon dried oregano
- salt and pepper to taste
For topping:
- 3 slices of ham
- 200gr cheese (or mozzarella)
- 150gr pitted olives
- 4 button mushrooms
- 1-2 tomatoes


How to make pizza Capricciosa



You should start by preparing the pizza dough
Use a medium bowl to combine 450gr flour and dried yeast. Set aside.
In a large bowl combine 250ml lukewarm water, 3 tablespoons of vegetable oil, 1 teaspoon of sugar and 1 teaspoon of salt.
Add the flour combined with dried yeast, gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, continue to knead until the whole flour is incorporated. You must obtain a soft, elastic and non sticky dough. If the dough is too sticky, you can add a little more flour (25-50gr).
Cover the dough with plastic wrap. Place the dough in a warm place and let it rise for 45 minutes - 1 hour (or until double in size).
Meanwhile prepare the other ingredients.
Prepare the sauce by combining into a medium bowl 160ml water, 3 tablespoons tomato paste, 1 teaspoon dried oregano, salt and pepper to taste. Set aside.
Grate the cheese, chop the ham into little squares and slice the mushrooms and the tomatoes. Set aside.
Place the risen dough onto floured working surface and divide it into 2 equal pieces.
Take 1 piece of dough and roll it into a 25/35 rectangle, to fit the baking tray.
If you are using a smaller baking tray, divide the dough into more pieces (3 or 4) and roll each piece of dough to fit your baking tray.
Place the rolled dough into the baking tray and prick it with a fork.
Place over the dough half of sauce and spread evenly.
Over the sauce place slices of ham, mushrooms, olives and grated cheese. At the end place a few slices of tomatoes.
Repeat with the other piece of dough.
Place pizza Capricciosa into the preheated oven and bake at 200°C for about 12-15 minutes.
Serve warm, with family and friends :)
